You may have heard of French Onion Soup, but what is French Onion Chicken?
When it comes to French onion soup, patience is the key to its deliciousness. The onions need to be sautéed for over ten minutes until they caramelize. Then, butter, herbs, and broth are added and simmered. Caramelized onions not only develop a strong sweetness but also release a nutty aroma. Finally, the soup is topped with baguette slices and cheese and then baked, resulting in a rich and flavourful dish.
French onion chicken works in a similar way. By incorporating chicken into the onion soup, the essence of the chicken blends with the caramelized onions, creating a harmonious and magical flavour combination. Ingredients
Chicken Maryland | 2 pieces (600g) |

onion | 3 bulbs |
garlic | 3 cloves |
Thyme | 2 sprigs |
Chicken Stock | 200 ml |
Cheddar Cheese | 50 g |
Mozzarella cheese | 50 g |
salt | 1 tsp |
Ground Black Pepper | 1 tsp |
Dill/Parsley | to taste |
Unsalted butter | 10 g |
Steps

To prepare, cut through the joint of the whole chicken leg to separate it into the thigh and drumstick. Then apply 1 teaspoon of salt and some olive oil evenly and marinate for 20 minutes.

Peel and slice the onions; mince the garlic; chop the dill; grate the two types of cheese and mix them together.

Heat a skillet over medium heat and add the chicken pieces. Sear one side until golden brown, then flip to sear the other side. During this time, add butter and continuously baste the chicken with it. Once both sides are golden brown, remove the chicken and set aside.

Using the same skillet, add the onions and sauté for 15-20 minutes until all the onions turn a deep brown color, which is known as caramelization.

Once the onions are deep brown, add the garlic, black pepper, and chicken stock. Cook for 2 minutes, then turn off the heat.

Preheat the oven to 180°C. Take a baking dish and layer it with some of the onions. Place the chicken pieces on top, then add the remaining onions over the chicken. Sprinkle some thyme and then top with the cheese.
7.
Finally, bake in the oven for 20-25 minutes and enjoy!
