Orange Sago with Coconut Milk - Making Your Own Sago is Super Fun!

In the scorching summer heat, what's better than enjoying a bowl of chilled sweet soup? Having two bowls, of course (laugh)!

Everyone has tried mango sago, but have you ever tried orange sago? BigBoy is a huge fan of sago desserts. The rich coconut milk combined with simple ingredients and the delicate texture of sago make it perfect whether served hot or cold. This time, I wanted to bring innovation to the classic dish by adding a modern twist. First, I used orange sorbet as the base and paired it with coconut milk, creating an unexpectedly delightful flavour combination. As for the sago, it might not look special at first glance, but it's homemade and flavoured with orange juice!

The reason it's called "True Orange Sago" is because the sago is actually made with fresh orange juice! Don't think that making homemade sago is too complicated. In fact, you only need orange juice, chilled oil, and agar agar powder to make it. The process is simple and very fun! Just mix the freshly squeezed orange juice with agar powder, then, while the orange juice is still warm, drop it into the chilled oil (preferably vegetable oil, as it has a mild flavour). The droplets of orange juice will instantly solidify upon contact with the cold oil, forming small, translucent sago-like pearls. These homemade orange sago pearls have a strong orange flavour, adding a playful twist to this innovative orange ice sago dessert!

This time, I used Sunkist Black Label Navel Oranges to make this dessert. These oranges are sweet and juicy, perfect for adding flavor to any dessert. This summer, treat yourself to a bowl of Coconut Orange Sorbet Sago. Once you've tried it, you'll be singing its praises!

Ingredients (serve 4)

Sunkist®Navel Orange

3 bulbs

Vegetable Oil

200 ml

Coconut Cream

300ml

Coconut Water

120g

Salt

1 pinch

Rock Sugar

50g

Agar Agar Powder

3g

Steps

1.

Freeze Orange Segments: Cut 2 Sunkist Navel Oranges into pieces and freeze them for a few hours until they are solid.

2.

Prepare Orange Juice: Juice another Sunkist Navel Orange to get about 120ml of juice and set aside.

3.

Prepare Cold Oil: Pour vegetable oil into a tall glass bottle and place it in the refrigerator to chill.

4.

Make Coconut Base: In a small pot, add coconut milk, coconut water, salt, and rock sugar. Heat over medium-low until the sugar dissolves. Remove from heat and let cool.

5.

Make Agar-agar Orange Mixture: In a cleaned small pot, add the orange juice and agar-agar powder. Heat over low heat, stirring until the agar-agar powder dissolves completely. Remove from heat and let cool slightly.

6.

Pour the cooled orange agar-agar mixture into a squeeze bottle.

7.

Create Orange Sago Pearls: Take the chilled vegetable oil out of the refrigerator. Slowly drip the orange agar-agar mixture into the cold oil. The droplets will form into small sago-like pearls.

8.

Strain the orange sago pearls and rinse them in room temperature water to remove the oil. Pat dry with a paper towel.

9.

Make Orange Sorbet: Take the frozen orange segments out of the freezer and blend them into a slushy consistency using a blender.

10.

Assemble the Dessert: In a bowl, scoop in the orange sorbet. Pour the cooled coconut mixture over the sorbet. Finally, top with the homemade orange sago pearls.
