Bacon Jam

First prepare the bacon jam. Dice the bacon into small pieces, finely chop the shallots and garlic, and finely dice the sun-dried tomatoes.

Heat a pan over medium heat without adding oil. Slowly cook the bacon until the fat renders and the surface becomes caramelised and golden crispy.

Add the shallots and garlic, then cook slowly in the bacon fat until softened and deeply browned, stirring occasionally to prevent burning.

Add the sun-dried tomatoes, then continue cooking until the mixture becomes thick and sticky. Pour in the apple cider vinegar, sugar and water, then reduce to low heat and simmer for about 10 minutes until it reaches a jam-like consistency. Set aside.
The Ragu

Finely dice the onion, celery and carrot. Cut cherry tomato in quarters. Finely chop the herbs.

Add olive oil to a large pot and slowly cook the onion, celery and carrot over medium heat. Continue stirring for about 15–20 minutes until the vegetables become deeply caramelised and golden brown, releasing their natural sweetness.

Takeout the vegetables and add the minced meat. Turn on high heat to cook out all the moisture and allow the meat to brown slightly to develop a caramelised flavour. Then add cherry tomatoes.

Add the tomato paste and cook over medium heat until darkened slightly and fragrant.

Pour in the red wine and cook until most of the alcohol evaporates and the liquid reduces.

Add the bacon jam, canned tomatoes and water. Stir well, then add the bay leaves and thyme. Once the sauce begins to simmer gently, reduce to the lowest heat. Slowly cook for 1.5–2 hours, stirring occasionally to prevent sticking.

When the ragù becomes thick and the oil begins to separate naturally from the sauce, the flavours are fully concentrated. Season with salt and black pepper to taste before serving.
