Tomato Penne with Pork Sausage & Basil Recipe

This dish uses fresh pork sausage, which is a versatile ingredient. You can either fry it directly to enjoy its flavour, or remove the casing and use the pork filling inside as ground meat. Pork sausage typically comes seasoned with layers of flavours, making it perfect for cooking.


Of course, if you can't find fresh pork sausage, you can substitute with ground pork and add your favourite seasonings. This penne pasta combines tomatoes and basil, not only embodying Italian charm but also offering a tangy-sweet flavor that's very appetizing. Lastly, adding a bit of Tabasco when serving adds a spicy kick, making the pasta even more flavourful!





Ingredients (serve 2)

 

Fresh Pork Sausage

250g

Penne

200g

Onion

½ bulb

Tomato Sauce

340g

Cherry Tomato

8 pcs

Pasta Water

60ml

Heavy Cream

60ml

Salt

½ tsp

Ground Black Pepper

½ tsp

Sugar

2 tsp

Basil

2 sprigs



Steps

 
1. Brunoise the onion;cherry tomato cut in half.

2. Remove the casing from the pork sausage and crumble the pork. (If you can't find fresh pork sausage, you can substitute with ground pork and season it with salt, black pepper, etc.)

3. Bring a pot of water to a boil. Add a generous amount of olive oil and the penne pasta. Cook for 6 minutes. Once cooked, drain the pasta, reserving about 60ml of pasta water for later use.

4. Heat a non-stick skillet over medium heat. Add 1 tablespoon of oil and sauté the chopped onion until softened. Then, add the crumbled pork sausage and sauté for 2 minutes.

5. Add the tomato sauce and mix well with the sausage and onions.

6. Add the cooked penne pasta and reserved pasta water to the skillet. Increase the heat to high and stir-fry the pasta to release its starch, mixing everything together thoroughly.

7. Add the halved cherry tomatoes, salt, black pepper, basil, and cream. Stir everything together well and cook until the sauce thickens slightly.

8. After plating, garnish with additional basil leaves. When serving, you can add a bit of Tabasco hot sauce for extra flavour!
