Uni Risotto - An ultimate journey of fresh flavour with sea urchins

Risotto is one of the classic dishes in Italian cuisine that best showcases patience and skill. When the golden-yellow sea urchin is incorporated, the rice absorbs the fresh sweetness of the ocean, and every bite feels as if the sea has been concentrated on the tip of the tongue. The charm of this uni risotto lies in the fact that it does not overpower; instead, in the gentlest way, it allows the flavour of the sea urchin to become the soul of the entire dish.

Why Uni Risotto works?
Sea urchin is particularly well suited to Risotto because it naturally has a rich umami flavour, a delicate richness, and a smooth, creamy texture that complements the Risotto beautifully. The starch released from the rice during cooking creates a naturally creamy and velvety consistency, allowing the sea urchin’s umami and richness to blend seamlessly into the dish. Since sea urchin does not require prolonged cooking, adding it towards the end helps preserve its delicate sweetness and fresh ocean flavour. Finally, the addition of butter and Parmesan cheese during the finishing process helps emulsify the Risotto, resulting in an exceptionally smooth and rich texture with a pronounced yet balanced sea urchin flavour.

Timing and technique for adding the sea urchins
First, slowly sauté the onion in olive oil until soft but without colouring, then add the Arborio rice and stir-fry briefly so the grains absorb the sweetness of the onion. Next, deglaze with white wine and cook until the liquid has almost evaporated, concentrating the wine’s aroma. For the stock, fish stock is recommended to complement the seafood theme. Add it in stages, allowing the rice to absorb slowly while maintaining medium-low heat throughout, in order to achieve the ideal al dente texture.
When the risotto is about 60–70% cooked and there is still an appropriate amount of liquid in the pan, add the Parmesan cheese and most of the sea urchin. Upon contact with heat, the sea urchin quickly releases its golden-yellow colour, giving the entire pot of rice a beautiful golden hue. Finally, turn up to high heat and stir rapidly to draw out the starch from the rice, forming a natural creamy texture. Finish with a little butter, turn off the heat, and it is ready to plate.

This dish pairs best with a refreshing white wine and should be enjoyed while hot to fully experience the fresh sweetness of the sea urchin and the warmth of the risotto. Every bite is a perfect dialogue between the ocean and the land.

Finely dice the onion. Divide the fresh sea urchin into two portions: 4/5 for mixing into the Risotto, with the remaining 1/5 reserved for garnish.

Add oil to a pan and sauté the onion over medium-low heat until translucent and soft, without allowing it to colour.
3.
Add the Arborio rice and toast over medium heat for about 1–2 minutes, allowing the grains to absorb the aromas of the butter and onion.
4.
Pour in the white wine, stir, and cook until the alcohol has evaporated and only a small amount of liquid remains in the pan.
5.
Add the warm stock gradually in several additions, stirring continuously after each addition. Wait until the rice has absorbed most of the stock before adding the next portion.

Continue cooking for about 14–16 minutes, until the rice is tender on the outside while retaining a slight bite in the centre.
7.
Gently mash the 4/5 of sea urchin into a paste and stir it into the Risotto, allowing the sea urchin to blend into the rice and impart a rich umami flavour and creamy texture.
8.
Add butter and Parmesan cheese. Stir vigorously to emulsify the butter and cheese, creating a smooth and creamy Risotto. Turn heat off.

Taste and season with sea salt as needed.

The ideal consistency of Risotto is all'onda, meaning it should naturally flow when spooned onto a plate rather than sitting in a mound. Transfer the Risotto to a warm plate and gently tap the bottom of the plate to allow the Risotto to spread naturally.

Finish by placing the remaining 1/5 of fresh uni on top of the Risotto and serve.
