Scrambled eggs may seem ordinary, yet they are one of the fundamental skills that truly test a chef’s mastery. When fresh sea urchin is added, the humble egg is instantly elevated to something refined and delicate. The essence of this uni scrambled egg dish does not lie in elaborate techniques, but in how to use the gentlest heat to preserve the purest sweetness of the sea urchin and the softest texture of the eggs.

The perfect balance between sea urchin and eggs
Sea urchin itself cannot withstand high temperatures; excessive heat will cause its fresh flavour to dissipate and its texture to become rough. Therefore, scrambled eggs must be cooked over low heat throughout, with continuous stirring, allowing the eggs to slowly set to about 70–80% doneness. The sea urchin is used in two parts: the majority is mixed into the egg mixture, while a small portion is reserved as a final surface garnish. This retains its complete form while ensuring every bite is filled with the presence of sea urchin.

The importance of cleanliness and hygiene
If using the sea urchin shell as a serving vessel, it must first be thoroughly sterilised in boiling water, and any residual pigment inside the shell should be removed as much as possible to avoid affecting the colour and hygiene of the scrambled eggs. After opening the sea urchin, carefully clear away all black impurities, leaving only the clean orange gonads. Although these details are tedious, they directly determine the cleanliness and texture of the finished dish.

Making uni scrambled eggs and heat control
After mixing the eggs, a little cream, salt and the mashed sea urchin, pour the mixture into a frying pan with melted butter. Maintain low heat throughout and gently push with a spatula continuously, allowing the egg mixture to slowly form soft curds. If it feels like it is setting too quickly, temporarily remove the pan from the heat and continue stirring; when residual heat is insufficient, return it to the heat. This “on-and-off” technique is precisely the key to achieving soft and tender scrambled eggs.

Crack the eggs into a bowl. Add the heavy cream and sea salt, then gently whisk with a fork.

Mash about 3/4 of the sea urchin into a paste and mix it into the egg mixture.

Heat a frying pan over low heat and add the butter. Once the butter has melted, pour in the egg mixture.

Continuously stir and fold the eggs with a silicone spatula over low heat. When the eggs are just beginning to set but are still very moist, immediately remove the pan from the heat. Continue stirring with the residual heat to keep the scrambled eggs creamy.

Finish with chives and a small piece of the remaining 1/4 of whole piece of uni.
