Sea urchin offers a fresh sweetness with a subtle seawater flavour, and its texture is fine yet rich. Butter provides a full dairy aroma and a silky smooth mouthfeel. When combined, the sea urchin’s freshness is gently enveloped by the butter — it doesn’t become overpowering, but instead develops layers of complexity and a long-lasting aftertaste. This is exactly why many top restaurants love to serve sea urchin butter as an appetiser.

Making Sea Urchin Uni Butter

Freshness is the key to success. It is best to use short-spine sea urchins caught on the same day and of excellent quality. Male sea urchins are particularly suitable for eating raw or making into butter, as their texture is firmer and their flavour sweeter and cleaner. For the butter, choose unsalted or low-salt varieties so you can control the seasoning yourself. If the butter has just come out of the fridge, take half of it and gently warm it until softened, then mix it with the remaining half to achieve a smoother, more easily blendable consistency.


First, lightly mash most of the sea urchin, keeping a small portion whole for later. Thoroughly mix the softened butter with the mashed sea urchin, adding a little lemon juice and an appropriate amount of sea salt to enhance the flavour. Once done, use a hot spoon to shape it into a beautiful quenelle, then place the whole pieces of sea urchin on top as garnish. Serve with freshly toasted bread and enjoy while hot for the best flavour.

Serving suggestions and variations

Sea urchin butter is best spread directly onto sourdough or a French baguette. It can also serve as the finishing touch for steak, grilled seafood, or roasted vegetables. If you want to elevate the flavour further, you can add a little finely chopped chives or black truffle shavings during preparation to create greater complexity. As the finished product melts easily, it is recommended to make it fresh and eat immediately, or store it in the refrigerator and bring it back to room temperature before serving.

Leave the butter at room temperature until softened.

Place about 40g of the sea urchin in a bowl and gently mash with a fork.


3.

Add the softened butter and lemon juice, and mix thoroughly. Season with sea salt.


4.

Place the remaining 10g of sea urchin on top of the butter.


5.

Absolutely delicious served with sourdough.
